Homemade Italian Salad Dressing

As the weather warms up, our meals tend to cool down.

This is why salads have always been top on my list in the summer months, and not to mention the nice variety of fresh vegetables the season has to offer. But why not make the dressing as fresh as the salad ingredients themselves?

Here’s a great and easy recipe for classic Italian dressing…

Ingredients:
2½ tablespoons of Italian wine vinegar
1 garlic clove, minced
Pinch of sea salt
Black pepper, freshly ground
4 tablespoons of virgin olive oil
2 tablespoons of fresh parsley, finely chopped

Directions:
Combine the vinegar and garlic. Then slowly whisk in the oil and parsley. Lastly, season with sea salt and pepper to taste.

Greek Hummus Wrap

I got this great recipe from the Lean Cuisine SparkRecipes iPhone App. I think is really livens up hummus and is really filling.

However, I will give you a fair warning: this may not be the most convenient for someone who does not keep chopped vegetables in the fridge. I have lately for salads (a very recent occurrence), so this takes me less than five minutes to make.

Ingredients
1 wheat pita or flat bread
4 tbsp hummus
¼ cup reduced fat feta cheese
¼ cup raw red onions, raw, sliced
¼ cup red peppers, raw, sliced
¼ cup cucumbers, diced
2 leaves of romaine lettuce

Directions

Spread hummus on flat bread, sprinkle feta cheese on top of the hummus, add all veggies, and fold pita. That’s pretty much it.

Here is some nutritional information. I am now on a caloric diet, but I do realize there are some folks who do Weight Watchers or count protein or carbs.
