Homemade Italian Salad Dressing

As the weather warms up, our meals tend to cool down.

This is why salads have always been top on my list in the summer months, and not to mention the nice variety of fresh vegetables the season has to offer. But why not make the dressing as fresh as the salad ingredients themselves?

Here’s a great and easy recipe for classic Italian dressing…

2½ tablespoons of Italian wine vinegar
1 garlic clove, minced
Pinch of sea salt
Black pepper, freshly ground
4 tablespoons of virgin olive oil
2 tablespoons of fresh parsley, finely chopped

Combine the vinegar and garlic. Then slowly whisk in the oil and parsley. Lastly, season with sea salt and pepper to taste.

Salad Dressing Ingredients:
2 TB white wine balsamic vinegar
2 TB Dijon mustard
1 tsp Splenda
¼ tsp freshly ground black pepper
¼ cup chopped fresh parsley

Salad Ingredients:
½ cup sliced red onions
½ lb baby spinach
¼ cup sliced mushrooms
¼ cup red bell peppers

First make the dressing to your tasting. The dressing itself is really good, but you want add more salt or parsley or Dijon mustard to suit your taste. If you find the taste of the Dijon mustard too overwhelming, simply counter it with the white wine balsamic vinegar, and vice versa. Place the dressing in the refrigerator until the salad is ready to serve.

Simply mix the salad ingredients and the dressing in a seal-tight container and toss the contents. This will ensure the dressing is even coats all the salad contents.

Parmesan Garlic Chicken Wings

I know everyone is tired of turkey, so here is an easy recipe for chicken. Now I must admit, this is not the most health-conscious meal; I sort of made this up when I had a craving for spiced-up baked chicken wings. So here you go, no nutritional information, but very good and easy wings…

8 chicken wings
4 tbsp. margarine
4 cloves minced garlic
2 cups grated parmesan cheese

Preheat oven to 425 degrees.

In a saucepan, melt margarine over medium heat. When margarine has melted, add the minced garlic and 1½ cup grated parmesan cheese. Stir until consistency is smooth. Simmer for five minutes.

Place chicken wings flat in a baking pan. Drizzle parmesan-garlic mix over wings. Cover baking pan with aluminum foil. Bake chicken wings for 1 hour.

Remove foil and sprinkle ½ cup of grated parmesan cheese over wings. Bake chicken wings for 15-20 minutes without foil or until golden.
